陜西蘿卜餅

制作材料:精面粉650克,白糖350克,熟豬油250克,生豬板油丁50克,蘿卜絲250克,紅棗25克,芝麻15克。  
特色:軟嫩酥甜,是陜西大眾化小吃食品。  
制作方法:  
1.紅棗去核洗凈,切成絲。盆內加芝麻(剁碎)、綿白糖、蘿卜絲、生豬板油丁拌勻成餡。  
2.盆內加300-325克面粉,倒入175克化開的熟豬油搓酥,分成5份,用濕布蓋上靜餳。  
3.剩余的面粉倒入盆內,加熟豬油75克、適量溫水和面搓硬,分成5份,用濕布蓋上靜餳。  
4.兩種面團分別搓成條,各摘成2塊,水油面搟開,油酥面放在水油面內,反復縱橫各疊3次,搟開將餡包在里邊,拍成圓餅,上鏊烙烤即成。  
制作要領:  
1.兩種面團要揉勻餳透;  
2.烙制時火不宜太旺,以免焦煳。
