琵琶肉為中甸藏區一種用傳統腌制方法制作而成的肉品。具體方法是豬屠宰后將其內臟和骨頭取出,保留完整軀體。待其稍涼后,撒入花椒面、草果面、食鹽等佐料及白酒,輕輕搓揉后,將其開口縫合,在縫線部涂敷上水或香油調好的灶灰,并用木塞或玉米芯把豬鼻塞嚴,以防蟲蛀。然后用石板或木板壓上晾干,干后形似琵琶,故名“琵琶肉”。琵琶肉的制作歷史悠久,保存時間長,若不切開,三、四年不變味。琵琶肉肉色透明,色鮮味香,風味獨特,是迪慶藏族、彝族等待客及家用的上等佳肴。(迪慶)
