選取細排骨,最好是略帶肥肉的那種,這樣的肥肉才不易塞牙。然后把排骨斬件,下生粉勾芡,跟著過油鍋。將紅谷米、牛尾湯、醋、片糖、鹽下混在排骨上,放在煲里煲爛。接著把子姜加上糖,再用排骨汁打芡,上桌的時候,把子姜和排骨一和就可以了。
