干鍋菊花牛鞭

  特點:入口酥爛,味香醇厚。

原料:牛鞭500克,雞胗30克,鴨胗30克。豆瓣醬3克,桂皮3克,八角2克,整干椒3克,鹽3克,味精2克,色拉油50克,醬油5克,姜3克,蒜瓣3克,高湯200克。

制法:

1.將牛鞭洗凈放清水中煮15分鐘后撈出,去尿筋,切菊花刀。雞胗、鴨胗切菊花刀。

2.炒鍋放底油,下桂皮、八角、整干椒、蒜瓣、豆瓣醬大火煸香,放入切好的牛鞭花、雞胗花、鴨胗花,放入高湯小火熬8分鐘至入味,用醬油上好色,加鹽、味精調味,出鍋裝入干鍋即可。
